My Life

Many things have changed since I first started this blog. I did receive my Masters degree in Nutrition this past May. Thomas and I were married in June and now I am currently in the process of completing DI applications, studying for the DTR exam,  and working at a local hospital as a diet clerk. Many things are new but the goal has always been the same. Become an RD.

This is me. Lindsey. Linds for short. And yes, my hair is naturally this curly. Some days I like it and some days I hate it.

I am a 23 year old graduate student. I have a bachelor's degree in Nutrition and Dietetics from the University of North Carolina -Greensboro. I am currently pursuing my master's in Nutrition at Meredith College. I live in Raleigh, NC with my puppy Luna, a corgi/feist mix. I'm hoping that after I get my master's I will get into a dietetic internship so that I can be a Registered Dietitian. I'm just taking it one day at a time.

I grew up in North Carolina and I can't imagine anywhere better. I love this state. What's not to love about a state that has amazing beaches at one end and then beautiful mountains on the other. Of course, I grew up in the middle of these things but they were always a couple of hours drive away.Many of my childhood memories take place in Emerald Isle, NC. It is still my beach of choice. Amazing place.

Pretty much at the moment, my life revolves around completing school, exercising, working at Barnes & Noble Cafe serving coffee to coffee addicts, learning to cook, and spending time with my family.
I love reading books, nothing is better than being sucked into a fantastic story. I love museums as well. They are tons of fun.

One of my goals with starting this blog is to inspire me to cook more and experiment. I have basic cooking skills, being a Nutrition major and all. But to actually make it apart of my daily life is a lot to ask of a poor college kid. I think with support from others, this can be accomplished. Since graduate school started, cooking has been rather difficult to do and to try and find time is almost impossible. I always have to make the  hard decision: to cook or to get work done. Work almost always takes precedence. I'm TRYING here and that's all that can be asked of me right now.
I also want to take more pictures. I used to take pictures all the time and I love that I did because now I have all these wonderful memories from looking at those pictures. Lately, I haven't found time to. My boyfriend, Thomas, even got me a brand new camera for Christmas and I haven't taken that many since then. That's going to change starting NOW.



I spend most of my time with the love of my life, Thomas. We've been together now for almost a year. I've never been as happy as I am with him. He inspires me in so many ways (he's even the one that pushed me to start this blog). So you'll definitely hear more about him if you continue to read.

 There are many more things I could share but I don't want to give myself away completely. ;)
This is my first attempt at blogging. It's scary but exciting at the same time. I'm by no means an experienced cook, in fact this is me gaining my first experiences with cooking and I'm going to share all of it, my life included. The good and the horribly bad. With the support of loved ones and the use of a camera, I don't think it will be that hard. It will be fun, even. I hope that you will continue to read and maybe even comment. Any feedback is welcome to this newbie to the Blogging World :)
