The School week is over and this is a random post.

Thank goodness this week is over. I had a lot of MNT work to do and then an exam today in there. One more exam in there and I'm done! There is still a lot to be done in my management class which is my least favorite class I'm taking. My teacher has never taught a class before so you can tell she takes it way too seriously. This class really isn't that essential to what I want to do. I do, however, need it to graduate. I think I am seriously suffering from 5th year Senioritis.

Other than school, not much has happened food or cooking wise. Fixed a couple of quick things and most days its been me throwing stuff together. Like Zucchini in Earthfare marinara sauce.


I poured it over penne then topped with some cheese.


I also (even though my funds are extremely low at the moment) got a smoothie this week from my favorite smoothie place near UNCG, The Fruit Bar
I tried a new smoothie, it had peaches, mango, pineapple and banana.


I've also become quite interested in the BBC show Doctor Who . I am currently watching the David Tennant series. I love it. I have already watched the Matt Smith series, courtesy of my friend Michael who's obsessed with the show.
It's just fun to watch. Lately I haven't had the courage to continue my Dexter episodes since the Season 4 finale has left me in shambles. *Must not speak of it*

So what are my thoughts on blogging so far? Well I'm going to be honest. I do enjoy it. Personally I think I have a lot of work to do to bring in an actual audience. I'm not comfortable yet sharing it on my Facebook or anything. If I felt like I had original and interesting content to share I guess I would. This isn't meant to sound like I dont have confidence or I don't think my life is interesting. I just have a life that consists of mainly school and hanging out with my friends and family. We are pretty laid back people, however. Not exactly travelling or rich enough to eat at the finest restaurants. But we are pretty real. I just like to write about what's happened during these times. It helps me in a way. In a way it makes me realize how good I have it. And plus I'm in a very big transition period in my life. I'm moving, graduating from undergrad, beginning graduate school and starting my life in a whole new city. I really wanted a place to document this change in my life. So there we have it. Oh and also I just like taking pictures of things I made or eat.

Looking forward to a lovely night with Thomas, however, we are fixing Veggie burgers, green beans, and then I'm going to try to make some sweet potato fries. We shall see. Oh and to go with our meal, we are watching a movie. It's up to him what we watch but I said I either wanted to watch The King's Speech or The Fighter, both movies look fantastic!

It's been a busy couple of days but it's been fun as well. Starting with Wednesday which was another beautiful sunny day in North Carolina. I spent the first part of my day, walking around campus, on purpose. I really like taking leisurely walks looking around campus and enjoying the nice weather. I had weight training before my walk and was definitely feeling it afterward. We had to plan out our own workout plans and it was more intense than any of our instructor's workouts. Crazy. I can feel it works though.

After that Thomas and I decided to go get something to eat. Since I have been craving Jason's for a while, we went there. I ordered the Portabella mushroom wrapini. It's my favorite ever. Especially with a side of pasta salad.


Thomas got the New Yorker w/ corned beef. Such a big sandwich.


And we ate outside but then all of sudden it looked like it was going to rain.


For the rest of the night we decided to finish Season 4 of Dexter and I must say...I am beyond shocked. But I won't say what happened. We also went to trivia and won! So it was a good night indeed.

I woke up this morning and had to rush off to Conditioning class. I didn't leave in proper time to find a parking spot close to my building so I had to park a little farther and ended up jogging to class in order to get there right at 9:30 on the dot. Funny thing was my instructor said to take a lap around the track to warm up and I definitely was already warmed up but I ran anyway. We did a circuit and it was tough. I almost felt like I needed my inhaler halfway through. Each exercise we did for one minute with a 10 second break in between each one. We did this 2 times through. Here was what we did:
  • Jumping jacks
  • front lunges
  • push-ups
  • burpees (THE DEVIL)
  • squat jumps
  • jumping jacks
  • squats
  • plank twists
  • Russian crunches

None of us in my class thought we'd make it but we did. Then we played a game.

I had MNT today where I had to present on Cancer MNT products. It went well and I was pretty relaxed. There's no pressure in that class surprisingly until we have an exam. Which our 3rd one is next Thursday. I should start studying for that soon.

For dinner I decided to make shrimp tacos. I put a mojito lime marinade on them with some vinegar and oil. Then sauteed some yellow squash, zucchini, and corn. Combined these. They were good.

For dessert we decided to go to our new favorite place, Taste . We had a Groupon that was good for $12. We ended up with $11.77 worth of FroYo. Good Deal!!! We are obsessed with FroYo. I never thought someone would love it as much as me but apparently someone does. Maybe more than me actually.

A mixture of California tart & blueberry tart yogurt w/ mango, strawberries, kiwi, blueberries, brownie bits, cheesecake bites, Twix and fruity pebbles. He loves it!
My creation was a mix between strawberry and banana pudding yogurt w/ strawberries, kiwi, almonds, mochi, and chocolate chips. It was super good. 




And I just watched my Blue Devils lose to Arizona while watching this. They played awful so it's for the best I guess. Thanks to the Seniors, Nolan Smith and Kyle Singler!

Cookouts + School Madness

Hi! I disappeared for a few days. Saturday was a day for me to relax and catch up on some sleep since I was gone for most of the day Friday and I was gone pretty much all day Sunday too for Round 3 games.

Saturday was really fun though. Thomas had the great idea to throw a cookout since the weather was great. We then decided to make it a Dexter cookout! So we headed off to the Farmer's Market to gather some veggies to make some kabobs for that night. We got some other things along the way.

The night just getting started...



Then cooking began. Thomas did most all of the cooking/grilling. He is awesome.




We had a friend with us. Grover. He's such a pretty Australian Shepherd.



Kelsey made some brownies for dessert.



Cooking continued. Also it was fun to make the kabobs. We had onions, red peppers, zucchinis, mushrooms and yellow squash.




Green beans were cooked. They were sooo good! and we bought a pineapple to grill. That is my favorite way to eat pineapple!





Funny fact. One of the first things Thomas and I sort of "flirted" over was pineapple. ha! I think I find it cuter than he does though. Men.
We also had a few bottles of wine with our meal.

It was so much fun. I had to get home a bit early though because I had to get up early to drive to my dad's. Then we were off to Charlotte for the 3rd round in the NCAA. I didn't take any pictures. It was a bit of a rushed day. Plus I was tired for most of the day. It was still a good time though. Duke won woo hoo!

Then Monday was no different than Sunday. I was all over the place it seemed. I had a ton of schoolwork, I had class then I had a group meeting. I had to rush home to get ready for a presentation that night. Which I wasn't sure how it went, I was mostly just glad it was over. Came home, scrambled some eggs and had a strawberry cream cheese bagel with granola and went to bed. 

Today started very early it seemed. Conditioning class always makes it seem that way. We were on our own today in that class so I chose to do an hour of elliptical, I switched machines in between. Felt pretty good and today is so nice. I took some pictures of my lunch that I got at one of my favorite places on campus, Coffeeology .

An egg and provolone wheat bagel. I had an iced green tea and a Red Machine Naked . It was such a nice day outside I ate my lunch outside.

Agenda for today:
  • Take an online Health exam
  • write a journal entry for conditioning class
  • Zumba class at 7!! I'm very excited!
  • Then dinner and maybe some more Dexter. We are obsessed, didn't I tell you?

March Madness Baby!

Hi from Charlotte!! This is a picture that WXII took of us outside before the NCAA games. It's my dad, stepmom, me and behind me is our family friends, Gary and Debbie. We were rooting for Tennessee today too since they are big Tennessee fans as well.

It was an early start to the morning but we headed down to Charlotte in perfect time to enjoy the sunshine outside for an hour or so. I was even interviewed for our local station on the chance of Duke winning the tournament a 2nd year in a row. And of course I said, Hell yeah they have a chance! Honestly though, I think I did pretty well. I'm trying to find the video, I'll post if I ever find :)

Duke ended up winning against Hampton by 42 points. Unfortunately, Tennessee didn't have the same luck. So we will play Michigan on Sunday.

As you can tell we don't have the best of seats but it's still a blast!

Afterwards, we left to go eat. We ate at Texas, Land and Cattle . Yep you guessed it, a Steakhouse. So we first snacked on spinach and artichoke dip.


I got the Mesquite grilled salmon on a romaine salad with low fat italian dressing.

After dinner, we went back to my Dad's where we watched some of the other games. I'm really glad I get tomorrow off to rest because these days can really take it out of you. However, I absolutely love this time of year!!
